Ginger Applesauce

             OK, so yes I had a bag of apples that  were bought with the GOOD intentions of eating BUT they kept sitting there & we only ate one or 2 & they just kept sitting there on the counter and getting riper & riper. Now tomorrow is New Years Day when everyone in Lancaster will sit down to a Pork & Kraut meal with applesauce as a side dish. You just can not eat Pork & Kraut without mashed potatoes & a dish of applesauce sitting beside your plate. It just isn't done ! So I decided to take that bag of apples that I bought for all healthy purposes of eating and decided to turn them into our side dish of applesauce. But not JUST applesauce. This is a thick chunky gingery bowl of GOODNESS! Serve this warm or icy cold either way your taste buds will thank you & so will your family !   

10 Medium sized apples very ripe is best & I used Gala Apples any good cooking or eating apple will be fine.
2 TBS Butter
1 12 OZ Can of Ginger Ale
1/4 TSP grated Ginger or Powdered Ginger fresh grated best!
Peel Core & slice apples. Saute them in the butter with the ginger until soft. Pour in the ginger ale & let cook until completely soft. Mash with a potato masher right in the pan. Spoon into a bowl & serve warm or cold. Great with pork or ham ! No extra sugar needed
